Leftover Roasted Chicken with Snow peas, Red Peppers and Quinoa

Ingredients:
50 Grams Snow Peas
50 grams Red Peppers
1 Small Onion, sliced thinly
3 Cloves Garlic, minced.
1/2 cup cooked Quinoa
120 grams shredded cooked chicken. ( I had some leftover roasted chicken from the night before)
Salt & Pepper to taste
Directions:
Heat some olive oil in a non stick pan and add in onions and garlic. Sauté until onions are translucent and garlic is fragrant. Add in the snow peas and red pepper and stir fry until soft. I like my veggies cooked really well so I add in a bit of water so it will cook more thoroughly. But this step is optional. When veggies are cooked add in the chicken and quinoa and fold until the temperature is right. Season with salt and pepper or soy sauce if you prefer. Serve immediately and enjoy :)
